It was during a local political event she orchestrated, in search of local brewers to showcase, that she encountered a bartender with ambitions of starting a brewery. “I invited him to the party,” Henderson recalled, as guests raved about his creations. Before long, a casual suggestion evolved into a business partnership with Austin Jevne, and Forager Brewery was born—a collaborative space brimming with character and award-winning beer.

Creating a Community Hub Through Craft and Culture

Founders Henderson and Jevne, now engaged, opened Forager Brewery in 2015 in a repurposed grocery store. Their vision extended beyond crafting exceptional beer for Rochester; they aimed to establish a venue supporting local musicians and artists. Over eight months of renovations, they sourced materials from all over Rochester to infuse the space with a unique character.

Salvaging antiques and materials from old barns, they painstakingly crafted the taproom to avoid the sterile and soulless vibe of many modern spaces. “We didn’t want to own a brewery that felt like you were drinking in a pool shed,” Henderson joked. Instead, Forager is a beacon for community, where people gather around fresh, scratch-made food, music, and art, with beer that reflects the brewery’s foraged, creative spirit.

The Passion for Wild and Untamed Flavors

A hallmark of Forager’s reputation is its dedication to wild and barrel-aged beers, brewed with ingredients that echo their adventurous foraging ethos. The focus on foraging extends beyond the taproom aesthetics to the rich variety of ingredients sourced for both their beer and menu. Henderson notes that they collaborate extensively with local farmers to incorporate foraged components into their dishes.

Their renown can be attributed largely to creations like Nillerzzzzz, a vanilla-infused imperial stout, capturing the attention of beer enthusiasts nationwide. Meanwhile, whimsical brews like Dollar Menu Pie evoke nostalgic flavors, rooting taste experiences in vivid memories. “It’s wild to see people travel so far for our beer,” Henderson reflects, underscoring the impressive reach of their program.

Culinary Craftmanship: The Heart of Forager’s Menu

Besides their signature wild brews, Forager offers an evolving array of 14 beers on tap, catering to every palate with sessionable beers and IPAs that fly off the shelves. The brewery’s commitment to quality extends to their food, with locally sourced produce shaping a menu as fresh as their beers are bold.

Forager takes pride in their partnerships with regional farms, using local ingredients to craft dishes like beef stroganoff made from high-quality beef, while offering eclectic culinary creations like their Bimbimbop bowl. “It’s a little different than what you’d expect, but it’s approachable,” shares Henderson, emphasizing the restaurant’s focus on fresh, inspired flavors that compliment the craft beers served.

Looking Forward and Embracing Community

As Forager Brewery celebrates its tenth anniversary, it thrives as a cornerstone of community culture and craft innovation. While the acclaimed beer program has undoubtedly been a focus, Henderson believes the real spirit of Forager lies in the people who interact with it. The brewery hosts a vibrant mix of musicians, artists, and events, making it a cultural hub for Rochester.

On bustling Friday nights, Forager’s lively atmosphere feels reminiscent of the iconic Cheers, with locals mingling and sharing stories over a pint. Henderson’s focus remains on fostering a welcoming environment where everyone is known, underscoring that Forager is as much a home to exceptional beer as it is to its cherished community.
